Why Do a Blog
In my previous post, I explained a bit about my journey to get to the point where I am today. And in this blog post I'm explaining the reason I started this blog.
I've had a stressful month as far as tasks on my plate (not my dinner plate.... just stuff that I have to do in work and home life). I need to eat healthily but I don't have time for fancy food preparation. And one can live on almonds and apples for only so long.
I went to Pinterest and typed in "Keto easy fast recipes". (You'll understand why later... sorry I'm in a rush... always in a rush... ugh!).
I start perusing the recipes.
Keto Bacon Ranch Chicken -- I don't like eating meat. I don't like the taste too much but I do eat it. I just don't want it at every meal, I don't want it to be the center of the meal, and I don't want it every day. I certainly don't need it doubled up in a recipe. And finding sugar-free, nitrate-free, and ethically raised and slaughtered bacon takes some time and energy.
Egg Fast Diet -- Blech! I'm not a huge fan of eggs. Every few months I can down an entire batch of my homemade deviled eggs, but otherwise eggs is something I kind of close my eyes and hold my nose before eating. I try not to think about it as it goes down my gullet. Eggs... ew!
Keto Friendly Fast Food Joints -- Um... no thanks. I'm not into processed foods and fast food joints have a lot of other "ick" factors to consider.
Make Ahead Eggs -- Ew, eggs again.
Crustless Taco Pie -- Cheese, meat, and sour cream. Sigh... I'm sensing a pattern here.
So why did I search on "keto fast easy recipes" to begin with then? I thought I'd find some healthy meals I could make with little fuss... meals that were low in carbs and had no processed ingredients or sugars. That was also the first time I search using the word "keto" (very trendy at the moment). I could just have easily done "paleo" or "whole30".
When I search for things that may be closer to how I really want to eat, like "plant-based whole foods" recipes... I keep coming up with things that include gluten or corn or yeast.
But I try anyway. The first one is a vegan meatloaf. Let me say straight off the bat that I'm not a fan of things pretending to be other things. I don't want a tofu hotdog or cheese made from yeast and soy protein.
I peruse the rest of the recipes and see that there are some potential winners there. The problem is, none of them are fast or easy. And truthfully, none of them seem to include lots of fresh and/or raw veggies. I like 50% of my diet to be raw foods.
Maybe Pinterest wasn't the best approach.
Maybe I'll make my own Pinterest board... with my own recipes. I can be a kingdom of one. Well, two actually because I have a friend who has almost identical food restrictions as I.
And so, that was a long-winded way of explaining why I feel the need to create a blog. Isn't it a waste of time if it's only for me? Nope, not at all. Why? Because this is where I'll post all my recipes and insight so that I can find it when I need it. Ha!
Do you know how many times I go to Google and type in "brown rice instant pot"? Like, every time I want to make brown rice. I can't remember everything I'd like to so if I have a place to catalog my info, I'll be able to find it easily. Yay!
If, however, you happen to be reading this and think anything I'm posting is useful to you, you know what? I'd love to know that. I'd LOVE to know that anyone is gaining any benefit to this blog. Yes, I need an ego stroke now and then. Please leave me a comment. I will be eternally grateful.
