Gluten Free Vegan No Oil Oatmeal Coconut Cookies


I woke up craving.  Ugh!

And since I have no will power I decided to make some cookies.

Here's my take on gluten free vegan no oil oatmeal coconut cookies.

Gluten free, vegan, no oil?!  That sounds like a lot of restrictions.  Can cookies really be made like that?  In the past I've done one or the other, but never all three.

Gluten-Free Vegan No-Oil Oatmeal Cookies Recipe

Ingredients
· 1½ cups oats
· 1 cup cassava flour
· 1 cup coconut shreds
· 1 tsp baking soda
· 1 tsp cinnamon
· ½ tsp Salt
· ½ cup maple syrup
· ½ cup unsweetened applesauce
· 1 tsp vanilla
· ¼ cup raisins or ½ cup frozen blueberries

Instructions
350 degrees for 10-12 minutes on a piece of parchment on a cookie sheet.

I just mix up all the dry stuff then add the wet stuff and start mixing.  I divided my mix and added raisins to half the batter and frozen blueberries to the other half.

I cooked the raisin cookies first.  I forgot that it's the oil in a cookie batter that makes the cookie spread out, so I made the batter into balls and spaced the cookies out.  There was no need for that.  After ten minutes they were just golden on the tops and still completely ball shaped.

I took them out and tried one.  Not only did it pass the taste test, it didn't completely crumble into a mess as soon as I touched it.  I was happy to see this because Captain Hindsight was saying I should have added a chia egg to the mix (1T chia seed with 1/3 cup water as an egg substitute).  I still might try that next time, but for now these were fine.

For batch two (the blueberry version), I made the cookies flat and did not space them far apart.  I cooked those for 12 minutes.

I was disappointed in the lack of "blueberry" flavor, and while I'd NEVER choose a raisin over a blueberry, I may choose the raisin cookies over the blueberry cookies.

Will either of these cookies excite most people?  No.  But trust me, my standards are pretty low.  By which I merely mean that I can taste beauty in a red bell pepper.  If you don't saturate your body, mind, and taste buds with grease and sugar and salt, you taste things differently.

So yay... I'm splurging today with my cookies!
