Bean Soup Variation Whole Foods Plant Based Vegan Easy Instant Pot Recipe

My friend Mary shared this recipe with me yesterday.  Looking over the ingredients, I decided I could make a variation of it without having to go grocery shopping, which is saying a lot because my fridge is pretty bare at the moment.

I'm going to post the link to the original recipe because my version (below) has some pretty significant changes.

The original recipe called for a pound of small white beans.  I only had half a pound so right off the bat I decided to half the recipe... sort of.  I altered things based on my likes, dislikes, and the availability of my ingredients.

I used quinoa rather than farro.  I used homemade veggie broth rather than water and bouillon.  I used more carrots, celery, onion, diced tomatoes, and garlic than the original recipe.  I do not like rosemary in my food so I left that out.  Did not use kale or yeast.  But did add a sweet potato, liquid smoke, and mushroom powder.

So here's my version:

Ingredients
  • 8 oz small white beans, dried
  • ½ cup quinoa, uncooked
  • 3 cups veggie broth
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, pressed
  • 16 oz can diced tomatoes
  • 1½ tsp thyme
  • 1 tsp basil
  • Black pepper, a couple grinds
  • Red pepper flakes, a healthy pinch
  • Salt, I did a few grinds and just add more at the table to taste
  • ½ tsp smoked paprika
  • 1 small sweet potato, chopped
  • Mushroom powder, several really healthy shakes
  • Liquid smoke, several healthy shakes
  • Lemon juice AT THE TABLE, not cooked in soup
The original recipe had instructions that I didn't notice until it was too late... like cooking things separately.  Oops!  

I threw all of the above ingredients (except the lemon juice!) into my instant pot and set it to manual for 30 minutes with an NPR of 25 minutes.

I would have put other veggies in there... I just didn't have anything else.

The soup is really yummy, but I feel it really needs that lemon juice and a smidge of salt when serving.
