Seriously Good Bean and Rice Burrito WFPB Vegan

I wasn't sure what I was going to make but I found some really thin whole wheat tortillas at the store and suddenly I was craving a big ol' burrito. I toyed with the idea of vegan cheese and/or vegan sour cream, but I'm really trying to not use processed foods so I decided to go without (and I didn't miss them!).
Went home and started some brown rice in the Instant Pot.
While the rice was cooking I put a bit of water into a non-stick frying pan on the stove on high and threw in half a chopped onion, then a very large, minced garlic clove, then maybe two tablespoons of my Mexican seasoning (see below). I added more water only to keep things from sticking to the bottom of the pan while I opened a can of low-sodium pinto beans. I drained the beans then dumped them into the frying pan and used a potato masher to mash them into the other ingredients while continuing to cook.
I may have lowered the heat a bit, I don't recall. This is a fast process, though, as the beans are already cooked and all I'm doing is mashing and heating them up. You can add diced fresh jalapeno to the mix... I just didn't have any on hand.
I heated the bean mix until enough water evaporated that they were the consistency of refried beans, then I removed them from the stove and began building the burrito.
I heated a tortilla in my toaster oven just long enough to get warm, but not long enough to harden up.
I placed some beans, some rice, some shredded cabbage, and my avocado cream (see below) into the tortilla, rolled it up, and thoroughly enjoyed eating it.
Rice
- 2 cups rinsed rice
- 2½ cups water (you can use broth if you like)
17 mins pressure, NPR
Taco Seasoning
- 2 tablespoon chili powder
- 1 teaspoon sea salt
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- 1 teaspoon ground black pepper
- 1 teaspoon ground coriander
- 1 teaspoon cumin ground
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Refried Beans
- 1 can low-sodium pinto beans (15-16oz)
- ½ onion, chopped
- 1 large garlic clove, minced
- 1-2 fresh jalapeno, chopped (optional)
- 1-2 tablespoons of seasoning spice mix
- Water as needed
Avocado Cream
- 1 avocado
- 1 large garlic clove
- ½ onion
- Juice of 2-4 limes
- 1/3 cup water or oil
- A pinch of salt
- A pinch of ground black pepper
Mix in Nutribullet or food processor. Alternately you can just put sliced avocado and lime juice into your burrito.
Shredded Cabbage (can use lettuce if you prefer)
All written out like that it looks like a lot, but it was really super fast and easy. All of these ingredients are staples in my house. And I had just made coleslaw so I had extra shredded cabbage. The spice mix I make up ahead of time and keep in my pantry.
