Oatmeal

I was remembering the other day that one of the reasons I wanted to try the elimination diet was that I seem to lack energy.

I went to Mexico last June and while there I didn't stick to my elimination diet.  I ate what most people would call healthy (no fast food, no sugary snacks, etc), but when I returned from vacation I realized I was really lethargic.

That's when it dawned on me that PRIOR to going to Mexico (and two months into the elimination diet), I apparently had started to lose the daily feeling of being tired all the time.  But I guess it's one of those things you don't notice or think about unless it's present.  Once it's gone, it's like out of sight out of mind.  I've noticed a few other symptoms that have disappeared that I didn't notice until I strayed from the diet and they came back.

Just thought I'd mention.

Oatmeal

My oatmeal takes on a few variations that are dependent upon how much time I have, how much trouble I feel like going to, and/or how many clean dishes I have.

This morning's version went like this (the fastest and simplest form):
While the kettle is heating, I put everything except the blueberries into a bowl (the bowl I'll be eating it out of).  And I put the blueberries into a smaller bowl.

When the water boils, I pour enough to cover the blueberries and enough to cover the oatmeal.  Then I strain the blueberries and add more of the boiling water.  Strain again and add the blueberries to the oatmeal.  That's it.  I just mix it up and eat it.

The Trader Joe's blueberries are very tiny so they thaw and warm quickly with this method.  If I'm using the larger blueberries from Costco I may weight a minute or so to confirm they are not only thawed but warmed too.

The things I may change up if I have more time include:
  • Chopping the walnuts
  • Roasting some pecans rather than using raw walnuts
If I'm really feeling decadent or have company or something, here's what I do...

I chop some raw organic pecans and put them on the stove in a non-stick pan.  I flip and shake them for a few minutes until they start to get a wee bit toasty.  Then I add maple syrup (several tablespoons, I'm sure), a pinch of salt, and some good shakes of cinnamon.  I mix them up until they either start to show signs of burning or of the syrup getting too thick.  Then I just dump it onto the already prepared oats/blueberry mixture.

I don't like mushy oatmeal which is why I don't actually *cook* the oatmeal but you do whatever works best for you.
