Spinach and Fruit Smoothie
Spent most of the morning running errands. My friend and I were going to eat lunch out but ended up not doing that, so when I got home at 2pm, I was not only hungry but I was dehydrated because I hadn't had much to drink either. Solution? Smoothie!
There are different ways to make smoothies and I will post some variety. For today's smoothie I wanted refreshing and very liquidy but at the same time I wanted a bit of substance to hold me over until dinner (going out tonight).

Spinach and Fruit Smoothie
- 2 cups of organic fresh spinach (a large handful)
- 200 grams of organic unsweetened frozen cherries (2 smaller handfuls)
- 7 pieces (70 grams) of organic unsweetened frozen mango (can't find a link to the company but this is what the package looks like)
- 1 Tbls organic flaxseed meal or flaxseed
- 1 Tbls organic hemp seed
- 11.1 oz of coconut water
- Tap water to just over the level of the contents
Add to Nutribullet and liquefy. This is not a low carb meal but it can be a treat once in a while.
Calories = 339
Fat = 6.5
Sodium = 98
Carbs = 65
Fiber = 10
Sugars = 50
Protein = 9
Not as pretty once mixed up...
I drank this whole thing and munched on a few tiny slices of Boont Corners Aged Raw Goat Milk Cheese from PennyRoyal Farmstead.
The flaxseed and hemp are staples in my kitchen so I always have them (stored in the fridge). Frozen fruit is also a staple, but it can vary. The coconut water is a staple (I only use it for smoothies) and the trick is just to remember to keep two in the fridge at all times. So spinach would be the only thing I'd need to buy and I try to plan my meals around these huge packages of spinach (if I'm not buying just a bunch). So the spinach works for smoothies, or tons of salads. I also like it in that pasta thing (haven't shown you that recipe yet but it's awesome).

Just in time! I was defrosting my frozen, organic, Costco fruits for a lunchtime smoothie. I always add a dollop of dairy-free yogurt. And I always forget the spinach!! Thanks for this post
