Eating Out and Leftovers

Remember those hash browns (or breakfast patties) from my previous post?  Yesterday (which was the next day), I added twice the amount of potato to the remaining mixture and they were much more to my liking.  So that was breakfast.  Although I'm running low on Primal Kitchen Ketchup (Organic Tomato Concentrate, Organic Balsamic Vinegar, Less than 2% of Salt, Organic Onion Powder, Organic Garlic Powder, Organic Spices).

I was taken out to lunch but I got to pick the restaurant and I remembered hearing the WFPB people have better options at Mexican, Thai, and Vietnamese  restaurants, so I picked a Vietnamese place with good reviews.  We both ordered Eggplant with Tofu (mine spicy, hers mild).  It was tasty but OH SO SWEET.  I'm guessing there was a crapton of sugar in the sauce.  Oh well.  We each ate half our meal and then had the leftovers for dinner.

So that was my day yesterday.  No cooking.  And today, it appears to be running in the same direction except I will try to make something for lunch.

For breakfast I cooked up the last of the hash browns, ate two of them and put the rest in the freezer for emergencies.  I'm also trying to get into the habit of labeling what I put into the freezer rather than saying to myself that I'll remember what it is or that I'll mark it later.  Ugh!

And I'm discovering that my meal plan for next week needs some tweaking.  My leftovers are lasting 3 to 4 meals rather than 2.  And the times when I'm not cooking (yesterday and today) throw the whole thing off in exponential ways.  In other words, I don't want to have food that I purchased and it goes to waste because I can't get to it in time.  Glad I only shopped ahead for 2 days rather than four, 'cause look... it's the third day and I haven't even gotten to the cabbage yet (good thing cabbage has a good shelf life).

My company tonight will be bringing dinner.  That means two things.  I'm going off the rails for one meal (it happens, don't beat yourself up over it) and it sets my meal plan back even further. 

Today's Friday but since I didn't do my shopping yet for today's meal plan, I should be able to shove everything back a day or two.  Yay!

I think I'll just have another Avocado Citrus Salad for lunch (what can I say... I love it!) and then do the Cabbage dish tomorrow for lunch.
