Elimination Diet Day 3

Today was a real trial.

I have company for the weekend.  The day started off with me driving to the grocery store to get "bagel fixin's" for them.  Got home and while I'm toasting their bagels and opening their cream cheese, I throw the last of the spinach into a sautee pan for my own impromptu breakfast.

Then I look at the ingredients list of their lox.  Amazingly enough, no sugar.  Very unusual.  It's just salmon, salt, and smoke.

So my breakfast was one tiny piece of lox with sautee'd spinach.

  • Lox
  • Spinach sauteed in coconut oil

I realize it wasn't much but I had planned to think of what to eat next after they were done with their breakfast.

Before I know it, however, we're making plans to go to the movies and... it starts in 20 minutes, so while they're putting their shoes on I grab the bowl of leftover salad from yesterday.  I downed about three bites then we head out the door.

Drove a couple towns over, watched the movie, then ended up going to three different stores shopping.  By that third store, I was definitely complaining about how hungry I was.  Luckily, though, before we'd left I had filled my water bottle so at least I was hydrated.

We get home mid-afternoon and I grab the tuna bowl and scarf the rest of the salad.

  • Veggie salad with tuna

Then out comes a two pound box of See's chocolates.  Amazingly enough, I steered clear of them.

Heaven help me, I *am* trying to do this the right way.  I mean, if I cave, all my hard work goes down the drain.  That would suck.

A few hours after we get home, I start preparing dinner.  It's going to be stir fry which will be a tad tricky, but not un-doable.

I end up cooking my salmon on the toaster oven with coconut aminos and their chicken in the sautee pan with teriyaki sauce.  Then in another pan I stir fry the veggies and pull out what I want before mixing their chicken into the veggie pot and adding more teriyaki sauce.

We all had some steamed Basmati rice (me, not as much as I usually do).

  • Baked salmon with olive oil and coconut aminos
  • Sauteed bok choy, carrots, broccoli, bean spouts, cabbage
  • Steamed Basmati rice

For dessert, they had key lime pie.  I had nothing.

Here are my daily totals.  Let it be known I am NOT a fan of caloric intake below 1200.  I'll try to make sure to eat more today.
